Steps

  1. 1

Slice chicken breast into thin strips. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and cornstarch. Set aside.

  2. 2

Chop broccoli into florets, slice bell pepper and carrots into thin strips. Mince garlic and grate ginger.

  3. 3

Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add chicken and cook until no longer pink, about 3-5 minutes. Remove chicken and set aside.

  4. 4

Add remaining 1 tbsp vegetable oil to the wok. Add broccoli, bell pepper, and carrots. Stir-fry for 3-5 minutes until vegetables are crisp-tender.

  5. 5

Add garlic and ginger to the vegetables, stir-fry for 1 minute until fragrant.

  6. 6

Return chicken to the wok. Pour the sauce over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.

  7. 7

    Serve immediately, optionally over rice.
