Steps

  1. 1

Pound chicken breasts to 1/2-inch thickness. In a shallow dish, combine flour, salt, and pepper. Dredge chicken in flour mixture, shaking off excess.

  2. 2

Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side, until golden brown and cooked through. Remove chicken and set aside.

  3. 3

Add remaining 1 tbsp olive oil and 1 tbsp butter to the skillet. Add sliced mushrooms and cook for 5-7 minutes, until softened and browned. Add minced garlic and cook for 1 minute until fragrant.

  4. 4

Pour in Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 5-7 minutes, until the sauce slightly thickens.

  5. 5

Return chicken to the skillet, spooning sauce over it. Simmer for 2-3 minutes to heat through.

  6. 6

Garnish with fresh chopped parsley and serve immediately, often with pasta or mashed potatoes.
